  1. Remove the smaller, softer central stalks from a celery bunch. Trim their bases at an angle.

  2. Prepare four transparent plastic cups, each containing 8 oz. of water.

  3. Add 20-30 drops of food coloring to three cups, while leaving one as a clear control.

  4. Submerge the celery stalks into the cups of water.

  5. Keep a journal and observe the experiment at three hours, 24 hours, and 48 hours. What differences did you observe during these time intervals?
